Mushrooms à la grecque may sound French and complicated but is in fact a super easy, quick and delicious way to cook mushrooms.
The adults in our household really enjoy this dish and we whip it up regularly. Have as a vegan treat, lunch, meze, with pasta, cous cous or rice. It’s always delicious.
We usually use white agaricus mushrooms but that’s simply because there are always some of those in our fridge. You can use whatever mushrooms you like or have available. If you go for button mushrooms you are making your life even easier as you don’t have to cut them up!
We almost always add a little bit of wine at the end of our cooking. It’s usually red but we are not too fussed. Whatever is available. We keep any half-empty bottles of wine right next to our stove to use for cooking.
But wine is definitely optional, these taste delicious in any case.

Ingredients
mushrooms, quartered (or whole if button mushrooms)
olive oil
onion, chopped
garlic, chopped finely or mashed
tomatoes, grated or crushed or 1 can of chopped tomatoes
parsley, chopped
choice of oregano, thyme, rosemary
salt
pepper
red wine (optional)
Directions
- Heat the olive oil in a large frying pan
- Add the onions and garlice and saute on medium-high heat for a 3-4 minutes till soft
- Add the mushrooms and saute for 10 minutes, stiring occasionally
- Halfway through add a pinch of salt and a bit of pepper
- Add the tomatoes, parsley and other herbs of your choice, stir and bring to the boil
- Let cook for a 5-7 minutes till your sauce looks like it’s blended properly
- Salt and pepper to taste
- Add the wine, stir and let it evaporated for a minute
- Serve warm and enjoy!
