
This is a super easy, super health dish. Serve fava as a main course with some fresh bread and salad. Or enjoy as a mezze, that is bring as part of a collections of dishes to be shared around the table. For example with some tzatziki.
Fava is not just delicious and very nutritious. It’s also super easy to cook. All you have to do is put a few ingredients and some water in a pan and dress before you serve. The most renowned Greek split peas come from the island of Santorini. Don’t forget, the lemon juice is absolutely esssential!
Kids love fava. It makes for a super easy lunch too so it’s very popular round our place. We try to eat pulses/legumes at least a couple of times a week and this split pea dip is very often on the menu. Let us know what you think!
Fava – Fabulous Split Peas

Ingredients
500 grams split peas
2-3 onions
1 bay leaf
salt, pepper dried oregano
3 tbsp olive oil
2 scallion (optional)
1- 2 lemons
Directions
- Wash the fava beans in a collander.
- Place in a cooking pan and cover with water.
- Bring to the boil. Use a spoon to remove the thick foam the beans will produce while cooking – it will make your dish lighter.
- Add the onions roughly chopped.
- Add the bay leaf, a pinch of salt, a pinch of oregano and a little pepper.
- Lower the heat and let the food simmer for around 30 minutes, until the beans are creamy. Add some water if it evaporates too quickly
- Remove the bay leaf.
- Pour everything in your blender and mix.
- Place on a serving dish, decorate with some chopped scallions and sprinkle with some juice from your lemons.
- Add salt, pepper, extra lemon and olive oil to taste!
