Have no fear, whipping this up is a piece of raisin cake! You just mix the ingredients and pour in a baking tin. Believe it or not, you are almost there!
Just measure everything out in two separate batches. Give them a whiz with the hand mixer and voila!
I know orange juice is mentioned twice. It’s no mistake, go with it.
Ground clove might sound a bit intimidating to some, but trust me. You won’t regret adding it to this cake. And it’s a great spice to have in your cupboard.
This raisin caek is great for breakfast or with a cup of coffee,on its own or with some ice cream if you have to. Thankfully, this recipe makes a sizeable raisin cake. You can have seconds and thirds, we certainly do!
Raisin Cake – Sumptuous Stafidopsomo

Ingredients
- Batch 1
1 cup of water
1 ½ cup freshly squeezed orange juice
1 espresso cup Metaxa or other cognac
1 tsp grated orange zest
- Batch 2
6 cups of all purpose flour
1 tsp cooking soda
1 tsp ground cinnamon
1 tsp ground clove (optional)
Juice from 1 orange
300 grams of raisins, preferably blonde, tossed in a teaspoon of flour
- You will also need
10 grams butter
1-2 tbsp flour
Directions
- Batch 1
- Preheat the oven to 170C or 340F
- Take you butter and rub it around your baking tin.
- Sprinkle enough of your 2 tablespoons of extra flour over your baking tin to lightly dust it. These two steps are to ensure you are able to turn out your cake easily when it’s done.
- In a large bowl mix all the ingredients of batch 1 using a hand mixer.
- Add all the ingredients of batch two to the mix, apart from the raisins. Mix with the hand mixer on low speed until the flour is all mixed in.
- Now is the time to add the raisins and mix with a serving spoon or with your hand mixer but very briefly and on the lowest power.
- Transfer the mix to your buttered and floured baking tin.
- Place the tin on the lowest rung of your oven.
- Cook for 1 hour and 15 minutes or until you stick a tooth pick in your stafidopsomo and it comes out clean.
- Let your cake cool down for a few minutes and enjoy!
