Oregano, garlic and olive oil all give this lemon chicken recipe distinctively Greek aromas. The kids love it, especially the juicy roasted potatoes. In our family we love chicken breast but you can certainly use chicken wings or even a whole chicken. You can let the chicken marinade in the sauce overnight if you want. It will make it even more tasty and juicy. Serve hot with some Greek salad, tzatziki and/or boiled vegetables.
Always save leftover wine to use in your cooking. Or, when shopping, make sure that you have at least one bottle of cheap, dry white wine stocked for cooking purposes. And an equivalent one of red wine.
If you want to make your life much much easier, you can also use baby potatoes for your lemon chicken. Just rinse dry them. Rhen add to your baking dish. There is no need to peel them. Stir to make sure they are covered in marinade.
You can use the leftovers for chicken salad or just freeze them for another day.
