Aromatic Oven-Baked Lemon Chicken

Oregano, garlic and lemon give this recipe distinctively Greek aromas. The kids love it, especially the juice roasted potatoes. In our family we love chicken breast but you can certainly use chicken wings or even a whole chicken. You can let the chicken marinade in the sauce overnight if you want; it will make it even more tasty and juicy. Serve hot with some Greek salad, tzatziki and/or boiled vegetables.

INGREDIENTS

1kg chicken fillets (4 large ones)

1kg potatoes, peeled and cut into 2.5 cm cubes

For the marinade

¼ olive oil

1 garlic clove crushed

1 tbsp of your favorite mustard

1 tsp oregano

1 tsp salt

pepper

juice of 1 large lemon

For the gravy (optional)

½ cup white wine, whatever you have left over

Serves 4 – 5

METHOD

  1. Preheat the oven at 180 C or 350 F
  2. For the marinade, place all the ingredients in a clean glass jar, add half a cup of water and mix thoroughly.
  3. Place the chicken in a large baking dish, douse with half the marinade and let it rest while you’re preparing the potatoes.
  4. After you’ve peeled the potatoes and cubed them, add to the pan.
  5. Add the rest of the marinade and mix so that your potatoes are properly covered with it.
  6. Place in the oven and let cook for around 1,5 – 2 hours or until the chicken cooks properly and turns golden nrown.
  7. Halfway through, give the potatoes a couple of stirs so that they don’t burn
  8. If you want to make gravy, move the chicken and potatoes to serving dishes and add the wine to your baking dish without emptying or rinsing it.
  9. Return to the oven for 10 minutes or so until the juices start bubbling. Give it a good stir to scratch the tasty bits stuck to the bottom of the pan – this will make your gravy so tasty. Let it cook for another couple of minutes.
  10. Sieve the gravy into a small jar or bowl and add to your chicken and potatoes to taste.  
  11. Enjoy your meal!

Always save leftover wine to use when cooking. Or, when shopping, make sure that you have at least one bottle of cheap, dry white wine stocked for cooking purposes.

If you want to make your life much much easier you can also use baby potatoes. Just rinse them, clean and dry them, and then add to your baking dish – no need to peel. Stir to make sure they are covered in marinade.

You can use the leftovers for chicken salad or just freeze them for another day.
