Oregano, garlic and olive oil all give this lemon chicken recipe distinctively Greek aromas. The kids love it, especially the juicy roasted potatoes. In our family we love chicken breast but you can certainly use chicken wings or even a whole chicken. You can let the chicken marinade in the sauce overnight if you want. It will make it even more tasty and juicy. Serve hot with some Greek salad, tzatziki and/or boiled vegetables.

minutesA very easy roast chicken recipe with distinctly Greek aromas
Ingredients
1 kg chicken fillets
1 kg potatoes, peeled and cut into 2.5 cm cubes
- For the marinade
¼ cup olive oil
1 garlic clove crushed
1 tbsp of your favorite mustard
1 tsp dried oregano
1 tsp salt
juice of 1 large lemon
pepper
- For the gravy (optional)
½ cup white wine, whatever you have left over
Directions
- Pre-heat the oven at 180 C or 350 F.
- For the marinade, place all the ingredients in a clean glass jar, add half a cup of water, screw the lid on and mix thoroughly.
- Place the chicken in a large baking dish, douse with half the marinade and let it rest while you’re preparing the potatoes.
- Add the potatoes to the baking dish.
- Add the rest of the marinade and mix so that your potatoes are properly covered with it.
- Place in the oven and let cook for around 1,5 – 2 hours or until the chicken cooks properly and turns golden nrown.
- Halfway through, give the potatoes a couple of stirs so that they don’t burn
- If you want to make gravy, move the chicken and potatoes to serving dishes and add the wine to your baking dish without emptying or rinsing it.
- Return to the oven for a few minutes, until the juices start bubbling. Give it a good stir to scratch the tasty bits that have stuck to the bottom of the baking dish – this will make your gravy so tasty. Let it cook for another couple of minutes.
- Pour the gravy into a small jar or bowl and add to your chicken and potatoes to taste. You can sieve the gravy if you want.
- Enjoy your meal!
Always save leftover wine to use in your cooking. Or, when shopping, make sure that you have at least one bottle of cheap, dry white wine stocked for cooking purposes. And an equivalent one of red wine.
If you want to make your life much much easier, you can also use baby potatoes for your lemon chicken. Just rinse dry them. Rhen add to your baking dish. There is no need to peel them. Stir to make sure they are covered in marinade.
You can use the leftovers for chicken salad or just freeze them for another day.

I do love an alternative to fried chicken once and awhile and this looks delicious. Thanks
